As a boy, the only hot sauce we kept in our house was the original Tabasco red sauce -- and that was the only variety of Tabasco that existed! When I grew a bit older, and I and my family had done a bit of traveling, I became accustomed to a (very) few more. During my twenties and thirties, my experience continued to grow and mature (and I made a few mistakes along the way!) Now, in my fifties, my palate has continued to expand. (And the mistakes have become more painful!)
In the past few decades, Tabasco has branched out and marketed a number of other hot sauces using different varieties of peppers of varying heat levels. Recently, I accidentally grabbed the bottle of Scorpion sauce, instead of the intended Chipotle sauce -- and got a flavor blast 20-30 times hotter than expected!
